After a brief pause in productivity, I am pleased to report that we have good news again!
Work on the grease trap, after a brief delay, is complete, and the water is back on (making cleaning things approximately one billion times easier). In addition, the architects have finished work on the drawings for equipment placement, and the health inspector came out for an initial walkthrough. All of these things are giving us a much clearer picture of where to go and how to proceed.

While there are still obstacles, and there's still a lot of work to be done, the task ahead of us is much more surmountable, and we're looking forward to opening in early June.
