​Dear friends and family,
As 2021 draws to a close, we want to take a moment to thank each of you for the many years of community that we all came to know and love.  In the six months since we lost our lease and closed the doors to our business we have done much soul searching as to what might be the next chapter for mmm...COFFEE! A Paleo Bistro. To be completely honest, we believe it's best to leave the restaurant world behind with the closing of this year.  It is with sincere sorrow that we announce our decision to close for good.   Know that it has been our sincere pleasure to have served you and to have known many of you on a personal level.  We are proud of all that mmm...Coffee! A Paleo Bistro brought to the world and so proud of all of you for helping to make the paleo lifestyle viable.  We will always cherish the nearly nine years we all had together.  
Sadly, the world in which we live has changed drastically and businesses like ours are now mandated by our cities and states to comply with unsafe regulations and arbitrary rules. We do not feel we can ethically do business in this new environment, under these conditions.
We believe deeply in health through nutrition and sunshine and exercise.  We believe in freedom.  We believe in the amazing creations that are our human bodies and our ability to heal and acquire natural immunity.  We've always walked and lived a life of honesty and integrity, and we will continue to promote these concepts.  Unfortunately, our cute little shop must take a backseat as we retool to address these more pressing issues of the day.
