Once upon a time, there was a 100% Paleo coffee shop.

​Its heroic owners were immeasurably happy, but they wanted to increase their ability to serve delicious Paleo things, so they decided to open a second location with a bigger kitchen.  After three years of seeking out this magical place, they thought they found it.  In March of 2016, they broke ground for a grease trap and were ready to proceed.

​Alas, life doesn't always work out the way we think it will.  Sometimes, what is best for a heroic little coffee shop is to remain in one spot, however small, and to focus and work within its limitations, finding creative ways to be unlimited.  Sometimes, a second location isn't even necessary.

​Sometimes, a second location would be really nice, but construction issues and city restrictions and disagreements with landlords make it impossible.  Sometimes, that's even alright.

​This is the official announcement that the location at 1500 W. Littleton Blvd. will not be opening.  Our differences with the landlords and our issues with construction made the location impossible to open, and we have terminated the lease.

​Although we are sad to make this announcement, the closing of one door means the opening of another.  For now, we are content to remain in our tiny little kitchen and focus on giving you the best coffee and Paleo food we can create.

​To things getting better by staying the same​--

So, it's been a while.  Here's why: There's been another delay, this time due to the HVAC system.  We're working to resolve it quickly, but, in the meantime, please send lots of good thoughts our way.

​To quick resolutions--

After a brief pause in productivity, I am pleased to report that we have good news again!

​Work on the grease trap, after a brief delay, is complete, and the water is back on (making cleaning things approximately one billion times easier).  In addition, the architects have finished work on the drawings for equipment placement, and the health inspector came out for an initial walkthrough.  All of these things are giving us a much clearer picture of where to go and how to proceed.

While there are still obstacles, and there's still a lot of work to be done, the task ahead of us is much more surmountable, and we're looking forward to opening in early June.

Well, here it is—the beginning.​

Once upon a time, there was a coffee shop that served exclusively, 100% Paleo food.  No, this isn’t actually a fairytale, it just sounds like one.  (And tastes like one.  Seriously.  In my completely, totally unbiased opinion, this place is fantastic.  Like, the stuff of legend.)

Anyway, so this coffee shop opens in the fall of 2012, and, slowly, word starts spreading that, hey, this place rocks.  But there’s a problem (because, really, what sort of story would this be if everything was bacon and house-made, gluten-free, grain-free, refined sugar-free chocolate?): the place is tiny.  It’s like this amazing little mini-coffee shop, and there’s no air conditioning, and the kitchen is only 100 square feet, and there’s not even enough electricity to keep both of those all-important slow cookers going at once.

Yeah.  Turns out that a teeny-tiny kitchen is a pretty massively giant problem.

And then there’s all of you lovely people, supporting us and our dream, and there’s more of you every day, and we just can’t even keep up after six months.

Alright, Executive Blog Writer Decision: I’m skipping some details here, because you’ve probably heard most of it anyway.  Suffice it to say that three years passed with increasing desperation for a bigger kitchen.

Here’s the end of that chapter: The heroic coffee shop owners found a spot, finally, at 1500 W. Littleton Blvd, and signed the lease.  However, there were various hold-ups and construction delays including, most notably, the whole The-City-Says-We-Need-A-Grease-Trap,-But-We-Haven’t-Got-One-Of-Those Delay.

Here’s how the next chapter starts: Today, they broke ground for the grease trap, thus getting us past Problem Number 1.  Our little coffee shop will live happily ever after, in two convenient locations.
